A Superior Prosecco
The Prosecco Superiore DOCG Ca’ Vittoria is produced from the Glera grape variety, cultivated in the micro-zones of the hills of Conegliano and Valdobbiadene. The “heroic harvest” takes place by hand on the steep hillsides starting in September. The grapes are carefully checked for sugar content and acidity. In the wine cellar, the grapes are gently pressed, thus extracting only the floral must that comes from the heart of the berry and rests in decantation at a temperature of around 5-10°C, preserving all the organoleptic characteristicstypical of this grape.
The process of ‘spumantizzazione‘ is carried out according to the traditional Charmat method, which preserves the varietal aromas of the grapes resulting in a fruity and floral wine with elegant and persistent perlage, characteristic of Conegliano Valdobbiadene.
